Buddhist monks observe a strict code of conduct (vinaya) in order to discipline the body and mind. Food is regarded simply as a means of keeping the body alive so that the spiritual path may be followed. Therefore they only have one meal a day which must be taken before noon. I can tell you the three monks in the previous up-loads were quick to leave us before 11.15am and go an have their food.
The reason for the one meal a day rule is that a meal in the evening may cause drowsiness and make the practice of meditation difficult. Also eating only one meal, reduces the burden on the lay community which supports them.
The monks learn to discipline themselves to be satisfied with very few material things, including food.
